Ingredients

Fruit Mixture

  • 4 fresh ripe peaches, peeled and cut into half inch wedges

  • 1 ¼ cups cold heavy cream
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Peaches: Peel the fuzzy skin from the fresh ripe peaches and cut them into half inch wedges, ensuring even and manageable pieces for serving.
  2. Mix Peaches with Sugar and Lemon: In a medium mixing bowl, combine the peach wedges with fresh lemon zest, 5 tablespoons of granulated sugar, and a pinch of salt. Stir well to coat the fruit evenly. Set aside to allow the flavors to meld and for the peaches to release some juice.
  3. Whip the Cream: Pour the cold heavy cream into a separate bowl. Add 1 tablespoon of granulated sugar and the vanilla extract. Using a hand mixer with a whip attachment, lightly whip the cream until it is fluffy yet still slightly pourable—avoid whipping it to stiff peaks as it should remain soft.
  4. Assemble the Dessert: Place 4 large or 6 small serving glasses or ramekins ready. Spoon the peach mixture, including the released juices, evenly into the cups to form the base layer.
  5. Add the Whipped Cream: Gently spoon the lightly whipped cream over the peaches in each cup. Tap the cups gently so the cream settles down between the peach pieces and creates a smooth layer.
