  • 1 ¾ cup granulated sugar (291g), plus approximately ½ cup for rolling
  • 3 tbsp orange zest
  • 1 large egg
  • 1 large egg yolk
  • 1 tbsp vanilla extract
  • ½ tsp orange extract
  • Orange gel food coloring (optional)

Instructions

  1. Prepare Oven and Baking Sheet: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, kosher salt, and optional ground cloves until well blended. Set aside this dry mixture.
  3. Infuse Sugar with Orange Zest: In the bowl of a stand mixer fitted with the paddle attachment or a large bowl with hand beaters, combine the granulated sugar and orange zest. Use your fingers to rub the zest into the sugar, releasing its essential oils for maximum flavor.
  4. Cream Butter and Sugar: Add the softened unsalted butter to the zesty sugar and mix on medium-high speed for about 3 minutes. Scrape down the sides of the bowl as needed. Continue mixing until the mixture is light in color and fluffy in texture.
  5. Add Eggs and Extracts: Beat in the egg, egg yolk, vanilla extract, and orange extract until fully combined and smooth. Optionally, add a small amount of orange gel food coloring to enhance the dough’s vibrant hue.
