Frozen S’mores are a no-bake, chilled dessert perfect for summertime or any time you crave the classic s’mores flavors without a campfire. Layers of creamy chocolate pudding, fluffy marshmallow cream, and crisp graham crackers are frozen into deliciously cool squares that can be enjoyed straight from the freezer or softened slightly at room temperature.

Ingredients

Chocolate Pudding Layer

  • 1 (5.9-ounce) box instant chocolate pudding mix
  • 2 1/2 cups whole milk
  • 1/2 cup Cool Whip, defrosted
  • 6 graham cracker halves (3 full crackers), broken in half and divided

Cream Cheese Marshmallow Layer

  • 5 ounces cream cheese, at room temperature
  • 7 ounces marshmallow creme
  • 2 cups Cool Whip, defrosted
  • Pinch of salt
  • 6 graham cracker halves (3 full crackers), broken in half and divided

Instructions

  1. Prepare pan: Line a 9×13-inch baking dish with parchment paper, leaving extra parchment hanging over the edges for easy removal later.
  2. Make pudding mix: In a medium bowl, whisk together the instant chocolate pudding mix, whole milk, and 1/2 cup Cool Whip until the mixture is smooth and creamy.
  3. Layer graham crackers: Lay half of the graham cracker halves evenly on the bottom of the prepared baking dish.
  4. Spread pudding layer: Pour the prepared pudding mixture over the graham crackers and spread it into an even layer. Chill in the refrigerator while preparing the next layer.
  5. Prepare cream cheese mixture: In a separate medium bowl, beat together the cream cheese and marshmallow creme until smooth. Fold in the remaining 2 cups of Cool Whip along with a pinch of salt until fully incorporated.
  6. Assemble cream cheese layer: Spread the cream cheese and marshmallow mixture evenly over the chilled chocolate pudding layer.
  7. Add top graham crackers: Place the remaining graham cracker halves evenly over the cream cheese layer.
  8. Freeze: Cover the assembled layers with foil and freeze for at least 6 hours, or until firm enough to cut into squares.
  9. Cut and serve: Use the overhanging parchment paper to lift the frozen dessert out of the pan. Place on a cutting board and, using the graham crackers as a guide, slice into 12 squares. Trim off any excess filling as needed.
  10. Enjoy: Serve immediately while slightly softened, or store the frozen s’mores in a zip-top bag in the freezer. If frozen, allow to sit at room temperature for about 15 minutes before eating for optimal texture.

  • Be sure to use defrosted Cool Whip to ensure smooth folding into the mixtures.
