These Easy French Dip Sliders are a delicious and satisfying crowd-pleaser featuring caramelized onions, savory roast beef, melted provolone cheese, and a flavorful onion butter glaze, all baked to perfection on sweet rolls. Served with a homemade au jus dipping sauce, these sliders are perfect for parties, game days, or any casual gathering.

Ingredients

For the Sliders

  • 3 tablespoons unsalted butter
  • 1 medium onion, thinly sliced
  • 2 teaspoons fresh thyme, minced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 12 sweet rolls
  • 10 slices provolone cheese
  • 14 ounces sliced deli roast beef

For the Butter Glaze

  • 1/2 cup unsalted butter, melted
  • 1 1/2 tablespoons dried onion soup mix

For the Au Jus Sauce

  • 1 packet au jus gravy mix
  • 3 cups water

Optional Garnish

  • Fresh chopped parsley

Instructions

  1. Caramelize the Onions: In a large skillet over medium heat, melt 3 tablespoons unsalted butter. Add the thinly sliced onions and coat them in the butter. Cook, stirring occasionally, for 12 to 15 minutes until the onions are soft and beautifully browned but not burnt.
  2. Season the Onions: Add 2 teaspoons fresh minced thyme, 1/4 teaspoon kosher salt, and 1/4 teaspoon black pepper to the caramelized onions. Stir well to combine, then remove from heat and set aside.
  3. Slice and Prep Rolls: Preheat your oven to 350°F (175°C). Take the 12 sweet rolls out of the package, keeping them intact. Slice each roll horizontally to separate the tops and bottoms. Place the bottoms cut-side up into an 11 by 7-inch baking dish, arranging them closely together.
  4. Layer Cheese and Beef: Layer half of the provolone cheese slices over the bottom halves of the rolls. Add the 14 ounces of sliced deli roast beef evenly on top of the cheese. Spread the caramelized onions over the roast beef, then add the remaining cheese slices on top. Finally, place the roll tops back on to cover the sliders.
  5. Brush the Butter Glaze: In a small bowl, combine 1/2 cup melted unsalted butter with 1 1/2 tablespoons dried onion soup mix. Stir to blend thoroughly. Generously brush this butter mixture over the tops of all the rolls, ensuring even coverage. Alternatively, you can pour the butter glaze on top.
  6. Bake Covered then Crisp: Cover the baking dish loosely with foil, making sure the foil does not touch the roll tops. Bake in the preheated oven for 25 minutes. After this time, remove the foil and bake for an additional 5 minutes to brown and crisp the roll tops nicely.
  7. Make Au Jus and Serve: While the sliders are baking, prepare the au jus sauce according to the package instructions, using 3 cups of water. Serve the sliders warm, optionally garnished with fresh chopped parsley, alongside small bowls of the au jus dipping sauce for a perfect French dip experience.

Notes

  • Make sure not to burn the caramelized onions; cook them gently over medium heat.
  • You can substitute provolone cheese with Swiss or mozzarella if preferred.
  • Keep the rolls close together in the baking dish to help them steam and stay moist underneath the foil.
