Ingredients

Filling

  • 4 ounces cream cheese (softened)
  • 1 teaspoon lemon zest
  • 3 tablespoons granulated sugar
  • ½ teaspoon fresh lemon juice
  • 1 can cherry pie filling

Wraps and Frying

  • 8 egg roll wrappers (6″x6″)
  • Oil (for frying), about 2-3 cups

Instructions

  1. Prepare the cream cheese mixture: In a bowl, combine softened cream cheese, lemon zest, granulated sugar, and fresh lemon juice. Mix well until smooth and fully blended. Transfer this mixture into a Ziploc bag and cut off a small corner to use it as a piping bag.
  2. Assemble the egg rolls: Lay out an egg roll wrapper on a clean surface with a corner pointing toward you. Pipe a line of the cream cheese mixture across the wrapper near the center. Then, add approximately 10 cherries from the pie filling on top of the cream cheese line.
  3. Roll and seal: Moisten the edges of the egg roll wrapper with water. Carefully roll up the wrapper tightly, folding in the sides as you go, to completely encase the filling and create a clean seal. Let the rolled egg rolls sit for 3-4 minutes to allow the water seal to set and prevent opening during frying.
  4. Heat oil and fry: Preheat oil in a deep pan or fryer to 350°F (175°C). Fry the egg rolls in small batches to avoid crowding the pan. Cook each batch for about 5-6 minutes or until the egg rolls are golden brown and crispy. Remove from oil and drain on paper towels.
