Ingredients

Chicken & Seasoning

  • 2 tbsp olive oil
  • 2.5 lb chicken tenders
  • 1 tbsp Cajun Spice Mix

Vegetables

  • 1/2 onion, sliced
  • 1 red bell pepper, sliced
  • 2 jalapenos, seeded and thinly sliced
  • 5 mushrooms, sliced

Cheese

  • 4 to 6 ounces pepper jack cheese, sliced

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350 degrees Fahrenheit. Grease a 9×13-inch baking pan or individual ramekins with nonstick cooking spray to prevent sticking and facilitate easy cleanup.
  2. Cook Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering. Add the chicken tenders and season them evenly with 1 tablespoon of Cajun Spice Mix. Cook the chicken, turning occasionally, until lightly browned on all sides and cooked through, about 10 to 15 minutes. Once done, transfer the chicken to the prepared baking pan(s).
  3. Sauté Vegetables: In the same skillet, add the sliced onion, red bell pepper, jalapenos (seeded and sliced), and mushrooms. Cook over medium-high heat until the onions become translucent and the peppers and mushrooms are tender. This process should take a few minutes. Then, spoon the cooked vegetable mixture evenly over the chicken in the baking pan.
  4. Add Cheese and Bake: Arrange slices of pepper jack cheese over the layered chicken and vegetables, covering them evenly. Place the pan in the preheated oven and bake for about 10 minutes or until the cheese is golden, melted, and bubbly.
  5. Serve: Remove from oven and serve immediately while hot and cheesy for the best flavor and texture.
