These zucchini vanilla muffins are a delightful way to sneak veggies into your toddler’s diet without compromising on taste. Soft, moist, and subtly flavored with cinnamon and vanilla, these muffins combine wholesome oat flour and shredded zucchini for a nutritious snack or dessert.

Ingredients

Wet Ingredients

  • 2 eggs
  • 1/2 cup sugar
  • 1 tsp vanilla extract

Dry Ingredients

  • 1 cup oat flour (made by pulsing rolled oats in a food processor until finely ground)
  • 1/2 cup rolled oats
  • 1 tsp cinnamon
  • 1 tsp baking powder

Vegetable

  • 1 large zucchini, peeled and shredded

Instructions

  1. Preheat Oven and Prepare Muffin Tray: Set your oven to 350°F (175°C). Line a muffin tray with liners and set it aside to make sure it’s ready when your batter is ready.
  2. Whisk Wet Ingredients: In a mixing bowl, combine the eggs, sugar, cinnamon, and vanilla extract. Whisk together vigorously for about one minute until the mixture lightens in color and becomes slightly frothy.
  3. Add Dry Ingredients: Stir in the baking powder, oat flour, and rolled oats into the wet mixture. Mix gently but thoroughly until everything is evenly incorporated without overmixing.
  4. Fold in Shredded Zucchini: Add the peeled and shredded zucchini into the batter. Carefully fold it in to distribute the zucchini evenly throughout the mixture, ensuring no large clumps.
  5. Fill Muffin Liners and Bake: Evenly divide the batter among the prepared muffin liners. Place the tray in the preheated oven and bake for approximately 13 minutes, or until a toothpick inserted into the center comes out clean and the muffin tops are lightly golden.
  6. Cool and Serve: Allow the muffins to cool in the tray for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.

Notes

  • Peeling the zucchini helps reduce excess moisture to avoid soggy muffins.
  • Oat flour can be made by pulsing rolled oats until finely ground if you don’t have oat flour on hand.
  • Use fresh zucchini for best flavor and texture.
  • For a sweeter muffin, increase sugar slightly but keep in mind toddlers’ sugar intake.
  • These muffins freeze well; wrap individually and thaw before serving.
