Instructions

  1. Create the Base: In a large bowl, whisk together the eggs, grated Parmesan cheese, canola oil, minced fresh parsley, minced garlic, salt, and pepper until the mixture is smooth and well combined.
  2. Add the Baking Mix and Veggies: Stir in the biscuit/baking mix, sliced zucchini, and chopped onion into the egg mixture until all ingredients are evenly incorporated.
