Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Prepare Zucchini: Grate the zucchini, then wrap it in a clean towel or cheesecloth and squeeze out as much moisture as possible to avoid soggy dough.
  3. Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and garlic powder until evenly combined.
  4. Combine Wet and Dry: Add the grated zucchini, shredded mozzarella, grated Parmesan, eggs, olive oil, and optional Italian seasoning to the dry ingredients. Stir thoroughly until a sticky dough forms.
  5. Knead Dough: Lightly flour your work surface. Turn the dough out onto it, and knead briefly to bring it all together into a cohesive mass.
  6. Shape the Dough: Press and shape the dough into a rectangular shape about ½ inch thick for uniform breadsticks.
  7. Cut Breadsticks: Using a knife or pizza cutter, slice the rectangle into strips approximately ½ to ¾ inch wide. Place each strip spaced apart on the parchment-lined baking sheet.
  8. Bake Breadsticks: Bake in the preheated oven for 15–18 minutes until the breadsticks turn golden and are cooked through. Keep an eye toward the end to prevent overbrowning.
