These Watermelon Popsicles with Chocolate are a fun and refreshing summer treat, combining juicy watermelon with rich dark chocolate and playful candy eyes. Perfect for kids and adults alike, these no-bake popsicles offer a delightful mix of fruity sweetness and decadent chocolate, ready in just 25 minutes.

Ingredients

Watermelon Popsicles

  • 4 slices watermelon
  • Popsicle sticks

Chocolate Coating and Decoration

  • 100 grams dark chocolate (3.5 oz)
  • 14 candy eyes

Instructions

  1. Slice the Watermelon. Cut 4 slices of watermelon about 1-inch thick to prepare for shaping into popsicles.
  2. Shape Popsicles. From one watermelon slice, cut a rectangular popsicle shape to use as a master template, then cut all other slices to match this shape.
  3. Create Bite Marks. Using a small round cutter or a small glass, trim a bite mark on one corner of each watermelon popsicle slice. You may leave some popsicles plain if preferred.
  4. Dry and Insert Sticks. Pat the watermelon shapes dry on a paper towel to remove excess moisture, then insert popsicle sticks firmly into each piece.
  5. Melt the Chocolate. Gently melt the dark chocolate in a heatproof bowl over a pot of simmering water or in short bursts in the microwave, stirring until smooth.
  6. Dip the Popsicles. Dip the tip of each watermelon popsicle into the melted dark chocolate to coat partially.
  7. Add Candy Eyes. Quickly sprinkle two candy eyes on the chocolate-coated tip while still wet to create a fun face.
  8. Set the Popsicles. Place the dipped popsicles on parchment paper and allow the chocolate to harden at room temperature for about 10 minutes.
  9. Serve. Once the chocolate is set, serve immediately for a refreshing, fun treat.

Notes

  • Ensure watermelon slices are well dried before dipping to help chocolate adhere better.
  • Use high-quality dark chocolate for best flavor and easier melting.
  • If candy eyes are unavailable, small chocolate chips or sprinkles can be used as an alternative.
  • Serve immediately or keep refrigerated briefly to maintain freshness.
  • This recipe is best enjoyed on a warm day as a cool, hydrating snack.
