A refreshing and vibrant Watermelon Fruit Salad tossed with a zesty lime mint dressing. This easy-to-make summer salad combines juicy watermelon, strawberries, raspberries, and cherries, enhanced with a sweet and tangy agave-lime dressing and fresh mint for a burst of flavor.

Ingredients

Fruit

  • 4 cups watermelon, cubed into 1 inch pieces
  • 1 1/2 cups strawberries, sliced into rounds
  • 1 1/2 cups raspberries
  • 1 1/2 cups cherries, pitted and halved

Dressing

  • 2 tbsp freshly squeezed lime juice
  • 1 1/2 tsp lime zest
  • 2 tbsp agave syrup
  • 1 tbsp fresh mint, finely chopped

Instructions

  1. Make the dressing: In a small bowl, whisk together the agave syrup, freshly squeezed lime juice, lime zest, and chopped fresh mint until well combined and fragrant.
  2. Prepare the fruit: Cube the watermelon into 1-inch pieces and slice the strawberries into rounds. Pit and halve the cherries. Place all the prepared fruit in a large bowl.
  3. Toss with dressing: Drizzle the lime mint dressing over the fruit mixture and gently toss to coat all the pieces evenly, ensuring the flavors meld together without bruising the fruit.
  4. Garnish and serve: Garnish the salad with some torn fresh mint leaves for an extra pop of color and freshness. Serve immediately or chilled for best flavor.

Notes

  • For extra crunch, consider adding chopped nuts like pistachios or almonds as a topping.
  • This salad is best served fresh but can be refrigerated for up to 2 hours before serving.
  • To pit cherries easily, use a cherry pitter or a sturdy straw to push the pit out gently.
  • Adjust the sweetness by adding more or less agave syrup depending on your taste.
  • Fresh mint should be added just before serving to maintain its bright flavor and color.
