This Walking Taco Casserole is a quick and delicious spin on classic walking tacos, layered with seasoned ground beef, black beans, diced tomatoes with green chiles, and topped with crunchy Fritos and melted Mexican-style cheese. Perfect for a family dinner or casual get-together, it’s easy to make and full of comforting Tex-Mex flavors.

  • 1 pound ground beef
  • 1 small onion, chopped finely
  • 1 package taco seasoning
  • ½ cup water
  • 1 can black beans (15 ounces), drained and rinsed
  • 1 can diced tomatoes with green chiles (10 ounces)
  • ½ cup sour cream
  • 1 bag Fritos corn chips (9.25 ounces)
  • 2 cups Mexican-style shredded cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and spray a 13×9-inch baking dish with nonstick cooking spray to prepare for the casserole assembly.
  2. Cook Ground Beef and Onions: In a large skillet, brown the ground beef over medium heat until it is almost fully cooked. Add the finely chopped onions and continue cooking until the onions are soft and the beef is no longer pink.
  3. Add Seasoning and Water: Stir in the taco seasoning package along with ½ cup of water. Bring this mixture to a boil, allowing the flavors to meld.
  4. Combine Beans, Tomatoes, and Sour Cream: Reduce the heat to low and stir in the drained black beans, diced tomatoes with green chiles, and sour cream. Let it cook for 8 to 10 minutes or until the mixture is heated through and slightly thickened.
  5. Layer the Casserole: Spread a single layer of Fritos corn chips on the bottom of the prepared baking dish. Sprinkle 1 cup of shredded cheese evenly over the chips. Spoon the beef mixture over the cheese layer, then top with the remaining shredded cheese.
  6. Bake: Cover the casserole dish with foil and bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and the casserole is bubbly around the edges.
  7. Serve with Toppings: Remove the casserole from the oven and top with extra Fritos and your favorite toppings such as sliced green onions, additional sour cream, guacamole, salsa, and jalapenos to taste.

Notes

  • For extra spice, add jalapenos inside the casserole mixture as well as on top.
  • You can substitute ground turkey or chicken for a leaner option.
  • If you prefer, substitute black beans with pinto beans.
  • Use reduced-fat cheese and sour cream to lower fat content.
  • Layering the Fritos before baking helps keep them from becoming too soggy.
