This creamy vegan tofu spread mimics the tangy richness of cream cheese using extra firm tofu, nutritional yeast, and fresh dill. Perfect as a versatile dip or sandwich spread, it blends quickly to a smooth texture and benefits from chilling to enhance its flavor and consistency. Ingredients

Vegan Tofu “Cream Cheese” & Dill Spread

  • 200 g extra firm tofu
  • 2 tbsp nutritional yeast
  • 1 ½ tbsp lemon juice
  • ½ tbsp apple cider vinegar
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • ¾ tsp garlic powder
  • 1 tbsp fresh dill (or use frozen dill or 1 tsp dried dill)
  • ¼ cup non-dairy milk (adjust amount as needed, especially if doubling)

Instructions

  1. Drain the Tofu: If your tofu is not extra firm, press out as much excess water as possible. You can do this by wrapping the tofu in a clean dish towel and placing something heavy on top for about 10 minutes to ensure better texture and creaminess.
  2. Blend Ingredients: Place the tofu, nutritional yeast, lemon juice, apple cider vinegar, sea salt, black pepper, garlic powder, dill, and non-dairy milk into a blender. Blend until the mixture becomes smooth and creamy, scraping down the sides of the blender as needed to ensure even blending. Taste and adjust seasonings by adding more nutritional yeast for cheesiness, lemon or vinegar for extra tang, or additional spices to deepen the flavor.
  3. Chill and Serve: You can serve the spread immediately, but it’s best to refrigerate it for at least 2 hours. Chilling allows the spread to thicken and the flavors to meld together. Store in the fridge for up to one week.

Notes

  • For best texture, always use extra firm tofu or press regular tofu well to remove excess moisture.
  • Adjust the amount of non-dairy milk carefully to achieve desired consistency; add little by little.
  • Use fresh dill for bright flavor, but dried or frozen dill can be substituted if needed.
  • This spread works wonderfully as a dip for crackers or veggies, or as a spread on sandwiches and bagels.
  • Store in an airtight container in the fridge for up to 1 week.
