Ingredients

Dry Ingredients

  • 1 cup oat flour
  • 1 ½ cup all purpose flour (gluten free or regular)
  • 1 tbsp cornstarch
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon

Wet Ingredients

  • 1 ¾ cup soy milk
  • 1 tbsp apple cider or white vinegar
  • ¼ cup oil
  • 2 tbsp ground flax seeds
  • 5 tbsp water
  • 2–4 tbsp granulated sugar (adjust to preference)
  • 2 tsp vanilla extract

Instructions

  1. Prepare Flax Egg: Mix together ground flax seeds and water in a small bowl and set aside to thicken for several minutes. This mixture substitutes eggs to bind the batter.
  2. Make Vegan Buttermilk: Measure out the soy milk and stir in the vinegar. Let this mixture sit for 10 minutes to curdle, mimicking traditional buttermilk.
  3. Combine Dry Ingredients: In a large mixing bowl, whisk together the oat flour, all purpose flour, cornstarch, baking powder, salt, and cinnamon until uniformly mixed.
  4. Add Wet Ingredients: Pour the vegan buttermilk, oil, sugar, vanilla extract, and thickened flax egg into the dry ingredients. Stir until just combined into a smooth batter. Adjust sugar to your desired sweetness, using between 2 to 4 tablespoons.
  5. Preheat Waffle Iron: Lightly grease the waffle iron and preheat. If your iron has settings, set it between medium-high (3rd and 4th setting on a 5-setting machine).
  6. Cook Waffles: Pour batter onto the preheated waffle iron, close the lid, and cook until the waffle iron signals it’s done by beeping or a green light turning on. Cooking times vary but generally take around 3-5 minutes.
  7. Cool and Serve: Carefully remove waffles and transfer them to a cooling rack to maintain crispness. Keep cooked waffles warm in an oven set to approximately 150°F if not serving immediately. Repeat cooking process until all batter is used.
  8. Serve: Enjoy warm topped with maple syrup, fresh berries, coconut whipped cream, or any preferred accompaniments.

Notes

  • The waffles keep well in the fridge for up to 3 days or can be frozen for about 3 weeks for convenient reheating.
  • The recipe yields approximately 5 square waffles using a square waffle iron that holds 4 squares per batch; circular waffle irons will produce about 2 full-sized waffles.
  • Any non-dairy milk can be substituted but soy milk is preferred for its higher protein content, providing better structure and fluffiness in absence of eggs.
