  • 75 g vegan butter (block-style), melted
  • 1 teaspoon vanilla extract
  • 460 g all-purpose flour
  • 60 g granulated sugar
  • 2 ¼ teaspoons instant yeast
  • 1 teaspoon sea salt

Filling

  • 60 g vegan butter (block-style), softened
  • 2 tablespoons light brown sugar
  • 1 ½ teaspoons ground cinnamon
  • 240 g vegan dulce de leche

Glaze

  • 60 g vegan dulce de leche
  • 60 g powdered sugar
  • 1 tablespoon plant-based milk
  • ¼ teaspoon sea salt

Instructions

  1. Make Ahead: Prepare the vegan dulce de leche at least 3 hours before starting or up to 2 days in advance to allow it to set properly.
  2. Prepare Vegan Buttermilk & Melt Butter: Make a batch of vegan buttermilk. Gently melt the vegan butter for the dough in a saucepan over low heat or microwave until just melted, ensuring not to overheat.
  3. Make the Dough: Stir the melted butter and vanilla extract into the vegan buttermilk. In a separate large bowl, whisk together all-purpose flour, granulated sugar, instant yeast, and sea salt. Pour the wet mixture into the dry ingredients and mix with a spatula until a shaggy dough forms.
  4. Knead the Dough: Turn the dough onto a clean, dry surface and knead for 5–7 minutes until it becomes smooth and elastic. The dough will be sticky at first; avoid adding extra flour as it will lose stickiness as you knead. Use a dough scraper as needed to lift the dough.
  5. First Proof: Lightly grease a mixing bowl with oil and place the dough inside. Cover tightly with plastic wrap and leave in a warm place for 1–2 hours or until doubled in size.
  6. Roll Out the Dough: Punch down the risen dough to release air. Roll it on a lightly floured surface into an 11 by 16 inch large rectangle.
  7. Fill the Rolls: Spread the softened butter evenly over the rolled dough, right up to the edges. Drizzle the 240 g vegan dulce de leche over the butter and spread evenly with an offset spatula. Mix light brown sugar and ground cinnamon together, then sprinkle over the dulce de leche layer evenly.
  8. Shape the Rolls: Cut the dough lengthwise into 9 equal strips using a pizza cutter or dough cutter. Roll each strip up tightly to form individual cinnamon rolls. Alternatively, roll the whole rectangle into a log and slice with unflavored dental floss into 9 rolls.
  9. Second Proof: Arrange the rolls in a parchment-lined 10½ x 7½-inch baking dish. Cover with plastic wrap or foil and let rise in a warm spot for 1-2 hours until puffed up and roughly doubled in size.
  10. Overnight Option: For overnight proofing, after shaping, cover the dish and refrigerate for up to 24 hours. Remove from fridge 2 hours before baking to let the rolls come to room temperature and puff up.
  11. Bake: Preheat the oven to 350°F (175°C). Bake the rolls for 20–24 minutes until tops are lightly golden. Allow to cool for about 15 minutes before glazing.
  12. Prepare the Glaze: Mix together 60 g vegan dulce de leche, powdered sugar, plant-based milk, and sea salt until smooth. Drizzle over cooled rolls before serving.
