This Vegan Apple Bread is a moist, flavorful loaf made with grated apples, warm spices, and sweetened with brown sugar. Perfectly tender and lightly spiced, it’s topped with optional creamy vegan cream cheese icing and caramelized apples for an indulgent treat that’s entirely plant-based and ideal for breakfast, snack, or dessert.

Ingredients

Dry Ingredients

  • 2 1/2 cups (315g) all-purpose plain flour (or gluten-free flour as noted)
  • 1 cup (200g) packed brown sugar or coconut sugar or granulated sugar
  • 3 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Wet Ingredients for Bread

  • 1 medium-sized apple (~180g), grated very coarsely or finely chopped
  • 1 cup (240g) dairy-free milk, room temperature
  • 1/2 cup (110g) neutral flavored oil
  • 1 tablespoon apple cider vinegar (optional)
  • 1 teaspoon vanilla extract (optional)

Cream Cheese Icing (Optional)

  • 1/4 cup (60g) vegan cream cheese, room temperature
  • 1/2 cup (60g) powdered sugar/icing sugar (or to taste)
  • 2 tablespoons (20g) vegan butter, room temperature

Caramelized Apples (Optional)

  • 1 medium-sized apple (~180g), cubed
  • 1 tablespoon (15g) vegan butter or water
  • 2 tablespoons (25g) packed brown sugar or coconut sugar

Instructions

  1. Preheat and Prepare: Preheat your oven to 180°C (350°F). Grease or line an 8-inch (20 cm) loaf pan with parchment paper to prevent sticking.
  2. Combine Dry Ingredients: In a large mixing bowl, add all the dry ingredients—flour, brown sugar, baking powder, baking soda, cinnamon, and salt. Mix well until evenly combined with no lumps.
  3. Add Wet Ingredients to Dry: Add the grated or finely chopped apple, dairy-free milk, neutral oil, apple cider vinegar (if using), and vanilla extract (if using) to the dry mix. Stir gently until just combined; avoid overmixing to keep the bread tender.
  4. Pour Batter into Pan: Transfer the batter into your prepared loaf pan. Smooth the top evenly with a spatula or the back of a spoon.
  5. Bake the Bread: Bake in the preheated oven for 50 minutes to 1 hour. Start checking at 35 minutes; if the top browns too quickly, loosely cover with aluminum foil to prevent burning. The bread is done when a toothpick inserted into the center comes out clean or with just moist crumbs.
  6. Cool the Bread: Let the bread rest in the pan for at least 10 minutes after baking. Then transfer it to a wire rack to cool completely before adding toppings or slicing.
  7. Prepare Cream Cheese Icing (Optional): In a small bowl, whisk together vegan cream cheese, powdered sugar, and vegan butter until smooth and creamy. For a firmer icing, increase the amount of butter and powdered sugar to taste.
  8. Caramelize Apples (Optional): In a small saucepan over medium-low heat, sauté cubed apples with vegan butter until they soften and start turning golden brown.
  9. Add Sugar for Caramelization: Sprinkle brown sugar over the apples and gently stir. Continue cooking and stirring until the apples are caramelized to your preference. Add a dash of water if the apples stick to the pan to prevent burning.
  10. Serve: Once the bread has fully cooled, spread the cream cheese icing on top and garnish with caramelized apples. Slice and enjoy!
  11. Storage: Store leftover apple bread in an airtight container at room temperature for up to 1 day or refrigerate for up to 4 days. You can freeze individual slices of plain apple bread (without topping) for up to 1 month.

Notes

  • You can substitute gluten-free flour for all-purpose flour to make the recipe gluten free.
  • Coconut sugar or granulated sugar can be used instead of brown sugar without affecting texture.
  • Grating or finely chopping the apple ensures it blends nicely into the batter, adding moisture and sweetness.
  • Checking early during baking prevents the top from burning; foil helps protect the crumb.
  • The cream cheese icing is optional and can be adjusted to your preferred sweetness and firmness.
  • Caramelized apples add a delicious finishing touch but can be skipped for a simpler bread.
