Vanilla snap biscuits are delightful, crisp little cookies bursting with a rich butter and vanilla flavor. Perfectly golden and dusted with icing sugar, these classic biscuits are easy to make and ideal for teatime or any sweet craving.

  • 220 grams caster sugar (1 cup)
  • 1 ½ tsp vanilla extract
  • 375 grams cake or all-purpose flour (2 1/2 cups)

  • 1 egg yolk

Instructions

  1. Preheat the oven: Set your oven to 180°C (350°F) to get it ready for baking the biscuits to a perfect golden brown.
  2. Mix butter, sugar, and vanilla: In a food processor, combine the butter, caster sugar, and vanilla extract. Process until the mixture is smooth and well blended.
  3. Add remaining ingredients: Add the flour, egg, and egg yolk to the food processor. Process everything until the dough forms a soft, cohesive mass.
  4. Knead the dough: Remove the dough from the processor and gently knead it just enough to bring it together into a ball. Then wrap it in cling film and refrigerate for 30 minutes to firm up.
  5. Roll out the dough: Take the chilled dough and roll it out between two sheets of baking paper or on a lightly floured surface to around 5mm (½ cm) thickness.
  6. Cut the biscuits: Use cookie cutters to cut the dough into shapes about 7cm in diameter, making sure all biscuits in one batch are similar in size for even baking.
  7. Prepare baking tray: Place the cut biscuits onto a baking sheet lined with baking paper or a silicone mat, spacing them sufficiently apart.
  8. Bake the biscuits: Bake in the preheated oven for 10 to 12 minutes until the biscuits turn golden brown. Rotate the baking tray halfway through baking for even color.
  9. Cool the biscuits: Carefully transfer the hot biscuits to a wire cooling rack to cool completely, as they continue cooking slightly from residual heat on the tray.
  10. Decorate and serve: Once cooled, dust the biscuits with icing sugar or decorate with icing or frosting as desired before serving.
