A classic and moist vanilla cake recipe perfect for any occasion, featuring a tender crumb and balanced sweetness, made with a blend of butter and oil, and finished with rich chocolate frosting.

Ingredients

Cake Ingredients

  • ½ cup unsalted butter, softened to room temperature
  • ½ cup avocado, canola, or vegetable oil
  • 1 ½ cups granulated sugar
  • 4 large eggs, room temperature preferred
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 ¼ cups buttermilk, room temperature preferred

Frosting

  • 1 batch Chocolate Frosting (recipe linked or use preferred frosting)

Instructions

  1. Preheat Oven and Prepare Pans: Preheat your oven to 350°F (177°C) and prepare two deep 8-inch round cake pans by lining the bottoms with parchment paper and lightly greasing the sides. Set aside.
  2. Cream Butter, Oil, and Sugar: In the bowl of a stand mixer or a large mixing bowl using an electric mixer, cream together the softened butter, oil, and granulated sugar until the mixture is creamy and well combined.
  3. Add Eggs: Add the eggs one at a time, beating well after each addition to ensure thorough incorporation and a smooth batter.
  4. Mix in Vanilla: Stir in the vanilla extract evenly throughout the mixture.
  5. Whisk Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt until evenly combined.
  6. Combine Dry and Wet Ingredients: Using a spatula, gently hand-mix the flour mixture alternately with the buttermilk into the butter mixture, starting and ending with the flour mixture. Mix just until combined after each addition to avoid over-mixing; small lumps are okay.
  7. Divide Batter and Bake: Evenly divide the batter between the prepared cake pans. Bake at 350°F (175°C) for 30-35 minutes or until the cake springs back to touch and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool Cakes: Allow the cakes to cool in their pans for 10-15 minutes. Then invert onto a cooling rack and let cool completely before frosting.
  9. Frost and Decorate: Frost the cooled cakes with the prepared chocolate frosting or your preferred frosting. Decorate with sprinkles if desired.

Notes

  • Using room temperature ingredients helps create a smooth batter and better texture.
  • If using alternate oils like avocado oil, it will maintain a neutral flavor and moist crumb.
  • You can substitute the chocolate frosting with cream cheese frosting, buttercream, or your favorite frosting options.
  • Make sure not to over-mix the batter after adding the dry ingredients to keep the cake tender.
  • To reduce baking times, use a convection oven or reduce batter thickness in pans.
  • For best results, use fresh baking powder to ensure proper rise.
