A refreshing and easy-to-make Tzatziki Chicken Salad combining creamy Greek yogurt, crisp vegetables, and tender shredded rotisserie chicken. Perfect for a light lunch or a flavorful snack served on bread, pita, or crackers.

Ingredients

Tzatziki Sauce

  • 1/2 unpeeled English cucumber (grated)
  • 1 cup plain Greek yogurt
  • 3 garlic cloves (minced)
  • 2 tbsp fresh dill (chopped)
  • 1/2 lemon (juiced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Chicken Salad

  • 1 whole rotisserie chicken (skin removed and shredded)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup celery (about 1–2 stalks) (diced)
  • 1/2 red onion (diced)

Instructions

  1. Prepare Cucumber: Grate 1/2 an unpeeled English cucumber using the large side of a box grater. Place the grated cucumber in a fine mesh strainer to remove excess water, then wrap it in a paper towel and squeeze out all remaining liquid to avoid watery salad.
  2. Make Tzatziki Sauce: In a large bowl, combine Greek yogurt, minced garlic, grated cucumber, chopped dill, lemon juice, salt, and black pepper. Stir thoroughly to blend all flavors into a creamy and tangy sauce base.
  3. Prepare Chicken: Remove the skin from the rotisserie chicken and shred the meat into bite-sized pieces. Add the shredded chicken to the bowl with the tzatziki sauce along with chopped parsley, diced celery, and diced red onion. Mix everything gently until fully combined.
  4. Serve: Optionally, serve the tzatziki chicken salad on toasted bread, with crackers, pita chips, or inside a lettuce or pita wrap for a delicious and fresh meal or snack.

Notes

  • Be sure to squeeze out as much liquid from the grated cucumber as possible to prevent a watery salad.
  • Use rotisserie chicken for convenience, but leftover roasted chicken can be used as well.
  • For extra flavor, chill the salad for 30 minutes before serving to let the flavors meld.
  • This salad pairs well with fresh pita bread, crunchy vegetables, or crisp crackers.
