This Tofu Chocolate Mousse is a rich and creamy vegan dessert made with silken tofu, bittersweet chocolate, and cocoa powder. It offers a smooth texture and deep chocolate flavor, perfect for satisfying your sweet tooth while keeping it plant-based and protein-rich. The mousse is easy to prepare and requires chilling to develop its luscious consistency.

  • 300340 g silken soft tofu (or soft tofu, 1 package)
  • 150 g bittersweet chocolate (use up to 200 g for a richer, deeper chocolate flavor)
  • 1.5 tbsp dutch cocoa powder
  • ⅛ tsp sea salt (or more to taste)
  • 40 g vegan protein powder
  • Maple syrup or honey (optional, to taste)

Instructions

  1. Prepare the Chocolate: If using chocolate blocks, chop them into smaller pieces for easier melting. If using chocolate chips, this step is not necessary.
  2. Melt the Chocolate: Place the chocolate pieces in a microwave-safe bowl and heat in 20-second bursts, stirring between each burst until the chocolate is about 90% melted.
  3. Finish Melting Chocolate: Remove the bowl from the microwave and stir the chocolate until all lumps dissolve and the chocolate is smooth and glossy.
  4. Drain the Tofu: Open the tofu package and carefully drain excess water. Optionally, place the tofu on paper towels or a clean cloth to absorb extra moisture, handling the tofu gently to avoid breaking it.
  5. Combine Ingredients: Add tofu to a blender or food processor. Add the melted chocolate, cocoa powder, sea salt, and vegan protein powder.
  6. Blend the Mixture: Blend the ingredients until the mixture looks somewhat grainy. Stop blending and scrape down the sides to mix any stuck ingredients.
  7. Blend Until Smooth: Continue blending until the mousse is smooth, uniformly colored, thick, and creamy.
  8. Adjust Sweetness: Taste the mousse and add 1 or 2 tablespoons of maple syrup or honey if desired. Stir or pulse to blend thoroughly.
  9. Chill: Pour the mousse into serving dishes and chill in the refrigerator for at least 8 hours to allow the mousse to set.

Notes

  • For a richer chocolate flavor, increase the bittersweet chocolate to 200 g.
  • Use maple syrup for a vegan option; honey is optional and will make the dish non-vegan.
  • The chilling time may vary depending on the size of the serving dishes; larger portions might require longer chilling for optimal texture.
  • Handle tofu gently as it is delicate and can break apart easily during preparation.
