Ingredients

Roasted Garlic

  • 3 heads garlic
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt (for roasting)
  • ¼ teaspoon black pepper (for roasting)

Garlic Butter Mixture

  • 2 sticks unsalted butter (softened)
  • ¼ cup fresh parsley (chopped)
  • 6 cloves garlic (chopped)
  • ½ teaspoon garlic powder
  • 1 teaspoon kosher salt (plus ½ teaspoon for roasting garlic)
  • ½ teaspoon black pepper (plus ¼ teaspoon for roasting garlic)
  • ½ cup parmesan cheese (freshly grated)

Bread

  • 1 large French loaf (sliced in half lengthwise)

Instructions

  1. Roast the Garlic: Slice off the top quarter of the heads of garlic and place them in aluminum foil. Drizzle with extra virgin olive oil and season with ½ teaspoon kosher salt and ¼ teaspoon black pepper. Wrap the foil tightly and bake in a preheated oven at 325°F (163°C) for 1 hour until the garlic is soft and caramelized. Remove from the oven, squeeze the roasted garlic cloves into a bowl, and mash with a fork.

Prepare the Garlic Butter Mixture: To the mashed roasted garlic in the bowl, add softened unsalted butter, chopped fresh parsley, chopped fresh garlic, garlic powder, the remaining ½ teaspoon kosher salt and ½ teaspoon black pepper, and freshly grated parmesan cheese. Mix thoroughly until all ingredients are well combined and form a creamy garlic butter.
  3. Spread the Mixture on Bread: Evenly spread the prepared garlic butter mixture over the cut sides of the two halves of the French loaf, ensuring a generous and aromatic coverage.
  4. Bake the Garlic Bread: Increase the oven temperature to 350°F (177°C). Place the buttered bread halves on a sheet tray in the center of the oven and bake for approximately 15 minutes, or until the bread is golden brown and the butter mixture is melted and bubbly.
