Ingredients

Sausage and Tater Tots

  • 1 pound regular or hot breakfast sausage, cooked and crumbled
  • 30 ounces frozen tater tots
  • 2 cups shredded Mexican blend cheese or cheddar cheese, divided

Egg Mixture

  • 8 eggs
  • 1 cup milk
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon granulated garlic or garlic powder
  • ½ teaspoon onion powder

Instructions

  1. Preheat and prepare dish: Preheat your oven to 350ºF. Grease a 9×13 inch baking dish with butter or non-stick spray and set aside to prevent sticking.
  2. Cook the sausage: In a large skillet over medium-high heat, cook the breakfast sausage thoroughly, breaking it up into crumbles. Drain any excess fat for a less greasy casserole.
  3. Assemble base layers: Spread the frozen tater tots evenly in the prepared baking dish. Scatter the cooked sausage over the tater tots, then sprinkle 1½ cups of the shredded cheese on top. Gently stir to combine these layers.
  4. Prepare egg mixture: In a medium bowl, whisk together the eggs, milk, kosher salt, black pepper, granulated garlic, and onion powder until the mixture is smooth and evenly seasoned.
  5. Combine and top: Pour the egg mixture evenly over the tater tots, sausage, and cheese layer in the baking dish. Sprinkle the remaining ½ cup of shredded cheese evenly on top.
  6. Bake: Place the casserole in the preheated oven and bake for 55-60 minutes. Bake until the eggs are set completely and the top of the casserole is golden brown around the edges.
