Instructions

  2. Add Flour and Salt: Add 1 cup of all-purpose flour and ½ teaspoon salt to the mashed sweet potatoes. Mix initially with a spoon and then use your hands to combine everything thoroughly. Transfer the dough to a lightly floured work surface and knead for about one minute until you have a compact, soft, and slightly moist dough. The dough should not be wet or sticky; add a little more flour if necessary.
  3. Shape the Gnocchi: Divide the dough into 4 equal pieces. Roll each piece into long ropes about ½ inch (1 cm) thick. Cut the ropes into small pillow-shaped pieces. Optionally, shape the gnocchi further by rolling each piece with your thumb on a gnocchi board or the back of a fork to create ridges, which help sauce adhere better.
