Egg Mixture

  • 10 eggs

Instructions

  1. Whisk Eggs and Milk: In a large bowl, thoroughly whisk together the 10 eggs and 1/4 cup of unsweetened non-dairy milk until well combined.
  2. Mix in Vegetables and Seasonings: Add the grated zucchini (with excess water removed), 1/4 cup chopped sun dried tomatoes, fresh basil, torn prosciutto pieces, parmesan cheese (if using), paprika, Italian seasoning, salt, and pepper into the egg mixture. Stir until everything is evenly incorporated.
  3. Prepare Slow Cooker: Line a 6.5-quart slow cooker with parchment paper to prevent sticking and facilitate easy removal of the frittata.
  4. Cook the Frittata: Pour the egg mixture into the lined slow cooker, cover it, and cook on low heat for about 3 hours. Check to ensure the middle of the frittata is set and fully cooked before proceeding.
