Ingredients

Stuffed Peppers

  • 5 large green bell peppers
  • 1 Tbsp oil
  • 1 medium onion, chopped
  • 1/2 tsp minced garlic
  • 1 lb ground beef
  • 1 tsp salt
  • 1 cup cooked rice
  • 15 oz. of your favorite tomato sauce

Instructions

  1. Preheat Oven and Prepare Peppers: Heat the oven to 350°F (175°C). Wash the bell peppers thoroughly. Slice a small amount off the bottom of each pepper so they can stand upright in the baking dish, then slice off the tops and remove seeds and ribs carefully.
  2. Chop Pepper Tops and Bottoms: Chop the pieces of bell pepper that were sliced off the tops and bottoms to use in the stuffing mixture.
  3. Sauté Vegetables: Heat 1 tablespoon of oil in a skillet over medium heat. Add chopped bell pepper pieces, chopped onion, and minced garlic. Sauté for a few minutes until the vegetables become soft and fragrant.
  4. Cook Ground Beef: Add the ground beef to the skillet and cook while stirring, breaking it apart until it is browned and no longer pink.
  5. Combine Filling Ingredients: Stir in 1 teaspoon salt, 1 cup cooked rice, and 1 cup of your preferred tomato sauce into the beef mixture. Cook together briefly to heat through and allow flavors to blend.
  6. Stuff the Peppers: Lightly spoon the meat and rice mixture into each prepared green pepper. Arrange the stuffed peppers snugly in a lightly sprayed baking dish so they can stand upright.
  7. Bake Covered: Cover the dish with foil or a lid and bake the peppers for 45 minutes, allowing the filling to meld and the peppers to cook through.
  8. Bake Uncovered: Remove the cover and continue baking for an additional 15 minutes. This step helps to slightly brown the tops of the stuffing and allows any excess moisture to evaporate.
  9. Serve: Serve the stuffed peppers hot, accompanied by any remaining tomato sauce as a delicious topping if desired.

  • For softer peppers, blanch cleaned and cut peppers in boiling water for 3-5 minutes before stuffing and baking.
