Inspired by Erewhon’s famous $23 Strawberry Skin Glaze smoothie, this recipe creates a thick, creamy strawberry smoothie base layered with a homemade strawberry chia glaze and swirls of coconut cream. It’s a refreshing, nutrient-packed drink featuring frozen strawberries, banana, avocado, Greek yogurt, and optional add-ins for extra nutrition, perfect for a flavorful and healthy treat at home.

Ingredients

Strawberry Chia Glaze Ingredients:

  • ½ cup strawberries
  • 1 pitted Medjool date or 1 teaspoon honey, maple syrup, or sugar substitute
  • 2 teaspoons chia seeds

Smoothie Base Ingredients:

  • 2 cups frozen strawberries
  • ½ cup frozen banana
  • ½ medium ripe avocado
  • 2 pitted Medjool dates or 2 teaspoons honey, maple syrup, or sugar substitute
  • ½ cup plain or vanilla Greek yogurt
  • 1 ½ cups almond milk
  • 2 tablespoons coconut cream
  • 2 scoops vanilla protein powder or collagen
  • Optional add-ins of your choice: (1 tablespoon MCT oil, 1 tablespoon sea moss gel, 1 tablespoon liquid hyaluronic acid, 1 teaspoon freeze-dried strawberry powder, 1 teaspoon vanilla extract)

For the Glass:

  • 2 tablespoons coconut cream or Greek yogurt
  • Prepared strawberry chia glaze

Instructions

  1. Make the Strawberry Chia Glaze: Add the strawberries and your chosen sweetener to a blender. Blend until smooth to create a flavorful strawberry base. Pour this mixture into a small bowl, stir in the chia seeds, and let it sit for about 20 minutes, allowing it to thicken into a jam-like consistency.
  2. Prepare the Smoothie Base: Without cleaning the blender, add the frozen strawberries, frozen banana, ripe avocado, sweetener, Greek yogurt, almond milk, coconut cream, protein powder or collagen, and any optional add-ins. Blend everything until smooth and thick, resulting in a creamy strawberry smoothie.
  3. Assemble the Glasses: Divide half of the chia glaze evenly between two tall glasses, spreading some on the bottom. Use a fork to swipe the remaining glaze on the inside walls of the glasses for a decorative effect. Then, use the back of a spoon to divide and press the coconut cream or Greek yogurt vertically along the inside edges of the glasses, creating elegant streaks.
  4. Pour and Serve: Slowly pour the smoothie base into the prepared glasses over the glaze and cream layers. Serve immediately to enjoy the beautiful layered smoothie.
