Ingredients

Topping

  • 1/2 cup old fashioned oats
  • 1/2 cup brown sugar
  • 2/3 cup flour
  • 1/3 cup salted butter, melted
  • 1/2 tsp cinnamon

Fruit Filling

  • 2 1/2 cups peaches, peeled and sliced (about 3 peaches)
  • 1 cup sliced strawberries

Syrup

  • 1/4 cup brown sugar
  • 3 teaspoons cornstarch
  • 1/3 cup water
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare topping: In a bowl, mix the old fashioned oats, brown sugar, flour, cinnamon, and melted butter until the mixture becomes crumbly. Set aside half of this mixture.
  2. Layer fruit and crust: Spread the remaining half of the topping mixture evenly on the bottom of a greased 9×9 inch pan. Then arrange the sliced peaches and strawberries evenly on top of this crust.
  3. Make syrup: In a small saucepan over medium-high heat, combine the brown sugar, cornstarch, salt, and water. Cook while stirring constantly until the mixture thickens, about 2 minutes.
  4. Add vanilla and pour over fruit: Remove the syrup from heat, stir in the vanilla extract, then pour this syrup evenly over the fruit in the pan.
  5. Add remaining topping: Sprinkle the reserved crumb topping evenly over the fruit and syrup layer.
  6. Bake the crisp: Bake the assembled crisp in a preheated 350°F (175°C) oven for 35 minutes, until the topping is golden and the fruit is bubbly.
  7. Optional broil for crispiness: For an extra crunchy top, switch the oven to broil and place the pan on the top shelf for 2-3 minutes. Watch carefully to avoid burning.
