These Strawberry Matcha Yogurt Clusters are a delicious and healthy high-protein snack combining creamy Greek yogurt, fresh strawberries, and antioxidant-rich matcha powder. Coated in a smooth white chocolate and coconut oil matcha glaze, they make a perfect freezer treat that is easy to prepare and satisfying to eat.

Ingredients

Yogurt Mixture

  • 1 cup Greek yogurt
  • 2 cups strawberries, chopped
  • 2 tablespoons honey or maple syrup

Matcha White Chocolate Coating

  • 1 cup white chocolate chips
  • 2 teaspoons coconut oil
  • 1 teaspoon matcha powder

Instructions

  1. Mix Yogurt Base: In a medium bowl, combine the Greek yogurt, chopped strawberries, and honey or maple syrup. Stir gently until all ingredients are evenly mixed.
  2. Form Clusters and Freeze: Using a spoon, drop spoonfuls of the yogurt-strawberry mixture onto a parchment-lined baking sheet. Place the sheet in the freezer and allow the clusters to set for 2 hours or until firm.
  3. Melt Chocolate and Coconut Oil: In a microwave-safe bowl, melt the white chocolate chips and coconut oil together in 20-second increments, stirring between each, until fully melted and smooth.
  4. Add Matcha Powder: Sift the matcha powder into the melted white chocolate mixture to avoid clumps, then stir thoroughly to combine into a smooth glaze.
  5. Coat Clusters and Freeze Again: Dip the frozen yogurt clusters into the white chocolate matcha mixture, ensuring they are well coated. Return the coated clusters to the parchment-lined sheet and freeze for at least 30 minutes until the coating is set.
  6. Store and Serve: Enjoy immediately after the final freeze, or store any leftovers in an airtight container in the freezer for up to 3 months to maintain freshness.

Notes

  • Ensure clusters are fully frozen before dipping to prevent melting.
  • Use a fine sifter for the matcha powder to achieve a smooth coating.
  • Substitute white chocolate chips with vegan white chocolate for a vegan variation.
  • Use honey for a natural sweetness or maple syrup for a vegan option.
  • Store in the freezer to keep clusters firm and fresh.
