These vibrant Strawberry Mango Popsicles are a refreshing and naturally sweet frozen treat, perfect for warm days. With a luscious blend of fresh strawberries and mangoes combined with citrusy lime and orange juice, these popsicles offer a delightful balance of tangy and sweet flavors. The optional step of cooking strawberries enhances their flavor, and the marble effect adds a beautiful touch, making them as pleasing to the eyes as they are to the palate.

Ingredients

Strawberry Mixture

  • 3 cups strawberries
  • 1 tbsp lime juice
  • 1 tbsp maple syrup

Mango Mixture

  • 3 cups cubed mango
  • 1/3 cup orange juice

Instructions

  1. Cook Strawberries (Optional): Add the strawberries, maple syrup, and lime juice to a small pot on medium heat. Cook for 5-10 minutes until the strawberries begin to soften, which will intensify their flavor.
  2. Blend Strawberry Mixture: Transfer the cooked strawberry mixture to a blender and blend until smooth.
  3. Fill Popsicle Moulds with Strawberry Mixture: Pour the blended strawberry mixture evenly into popsicle molds, filling them halfway.
  4. Blend Mango Mixture: Clean the blender, then add the cubed mango and orange juice. Blend until smooth.
  5. Fill Popsicle Moulds with Mango Mixture: Evenly divide the mango mixture into the popsicle molds on top of the strawberry layer.
  6. Create Marble Effect (Optional): Use a knife or chopstick to swirl the mixtures gently within the molds to create a marbled look.
  7. Freeze Popsicles: Cover the molds with lids and insert popsicle sticks. Place them in the freezer overnight to set completely.
  8. Unmold and Serve: To remove, run the molds under warm water for about 30 seconds and gently pull the popsicle sticks to release the popsicles.

Notes

  • Cooking the strawberries is optional but enhances their flavor significantly.
  • For best results, ensure the mangoes are ripe and sweet for a naturally sweet popsicle.
  • The marbling technique gives a pretty swirl effect but can be skipped if desired.
  • Use fresh fruit rather than frozen for smoother blending and better texture.
  • Maple syrup can be substituted with honey or agave syrup if preferred.
  • Allow adequate freezing time (overnight) to ensure the popsicles are fully set.
