These delightful Strawberry Hand Pies are a quick and easy baked dessert, perfect for any occasion including Valentine’s Day. Made with flaky refrigerated pie crust and sweet strawberry filling, they are hand-sized and glazed with a smooth powdered sugar icing. Ready in just 30 minutes, these charming pies offer a delicious combination of buttery crust and fruity sweetness.

Ingredients

Pie Crust

  • 2 boxes refrigerated pie crust (14.1 ounces each)

Filling

  • 1 can strawberry pie filling (21 ounces)

Glaze

  • 2 ½ cups powdered sugar
  • ¼ cup milk

Finish

  • 1 egg white, beaten

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) to prepare for baking the hand pies.
  2. Prepare the filling: Empty the strawberry pie filling into a shallow bowl. Use a fork and knife to dice the strawberries into small pieces for easier filling and sealing of the pies. Set this mixture aside.
  3. Cut the pie crust: Unroll the refrigerated pie crusts and use a 4-inch biscuit cutter to cut out 6 circles from each crust. You may need to re-roll the scraps to cut out the sixth circle. Alternatively, use a Wilton heart-shaped cookie cutter for a festive shape.
  4. Fill and seal the pies: Place about 1 tablespoon of the strawberry filling into the center of each crust circle. Fold the dough over the filling to create a half-moon shape and pinch the edges to seal. Then fold the pinched edge over and press with a fork’s tines to secure. Poke one hole with a fork on top of each pie to allow steam to escape during baking. For heart shapes, sandwich the filling between two hearts, pinch, press edges, and poke as above.
  5. Brush with egg white: Beat the egg white until frothy and brush it evenly over the tops of each hand pie for a beautiful golden finish.
  6. Bake: Place the hand pies about 1 inch apart on a parchment paper-lined baking sheet. Bake for 15 minutes or until the pies are browned and cooked through.
  7. Make the glaze: While the pies are baking, whisk together the powdered sugar and milk until smooth to make the glaze.
  8. Glaze the pies: Remove the warm pies from the oven and carefully dip each one into the glaze, coating completely. Use two forks to flip and lift the pies. Place back on parchment paper and allow the glaze to set for about 5 minutes.
  9. Enjoy: Once the glaze has set, your strawberry hand pies are ready to be enjoyed fresh and warm.
