  • 1/2 teaspoon salt

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Set aside to prepare the rice mixture.
  2. Combine Ingredients: In a food processor or blender, add cooked rice, fresh spinach, Parmesan cheese, olive oil, lemon juice, onion powder, garlic powder, salt, and black pepper.
  3. Pulse to Paste: Pulse the mixture on high until it forms a paste. Some small spinach chunks are fine. Scrape down the sides of the processor once or twice to ensure even blending.
  4. Form Balls: Wet your hands with water to prevent sticking and roll the rice mixture into 20 small balls. Place each ball on the prepared baking sheet.
  5. Bake: Bake the rice balls in the oven for 15 minutes until they have firmed up slightly and are heated through.
  6. Serve: Enjoy the spinach rice balls warm or at room temperature. Store any leftovers in an airtight container for up to 3 days.
