  • 1 tbsp olive oil

  • 1 jalapeño (sliced)
  • 14-oz can pineapple chunks (drained)
  • 1/2 tsp salt
  • 1 tbsp green onion (sliced)

Instructions

  1. Prepare the marinade: Drain the can of pineapple chunks, reserving the juice. In a bowl, mix together soy sauce, pineapple juice, chili sauce, minced garlic, grated ginger, and red pepper flakes until well combined.
  2. Marinate the chicken: Cube the skinless, boneless chicken thighs and add them to the marinade. Ensure all pieces are evenly coated. Cover and refrigerate for about 20 minutes to let the flavors infuse.
  3. Sauté vegetables: Heat olive oil in a skillet over medium heat. Add sliced white onion and jalapeño, cooking for 1-2 minutes until slightly softened and fragrant.
