Ingredients

Chicken and Coating

  • 4 boneless skinless chicken thighs
  • 1 egg
  • 2 tablespoons dairy free milk
  • 2 tablespoons hot sauce
  • 2 cups panko breadcrumbs
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon chilli powder
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon sea salt
  • Olive oil for drizzling

Burgers and Toppings

  • 4 plant-based brioche buns
  • Sliced pickles
  • Pre-packaged coleslaw (shredded cabbage and carrot)
  • Spicy mayo (see notes)
  • BBQ sauce

Instructions

  1. Preheat Oven: Set your oven to 200°C fan-forced (220°C conventional) and line a large baking tray with baking paper to prepare for baking the chicken.
  2. Prepare Chicken: Cut each chicken thigh in half, creating 8 pieces. Place chicken pieces between plastic wrap and pound evenly using a meat mallet or small frying pan to ensure uniform thickness for even cooking.
  3. Prepare Coatings: In a shallow bowl, whisk together egg, dairy-free milk, and hot sauce. In another bowl, combine panko breadcrumbs with smoked paprika, onion powder, garlic powder, chilli powder, cayenne pepper, black pepper, and sea salt, mixing thoroughly.
  4. Coat Chicken: Dip each chicken piece first into the egg mixture, then coat thoroughly with the spiced breadcrumb mix, pressing the panko onto the chicken to ensure it sticks well. Repeat for all pieces.
  5. Bake Chicken: Drizzle olive oil on the prepared baking tray and arrange coated chicken pieces on it. Drizzle a little more olive oil on top of the chicken. Bake in the oven for 30 minutes, flipping the pieces after about 20 minutes, until the breadcrumbs are golden brown and the chicken is cooked through. Remove and lightly season with salt.
  6. Assemble Burgers: Toast the brioche buns. Spread BBQ sauce on the bottom bun, add two chicken pieces, then top with coleslaw and sliced pickles. Spread spicy mayo on the top bun and place over the filling. Serve immediately for the best taste and texture.

  • To make the spicy mayo, mix mayonnaise with additional hot sauce or chili powder to taste.
