Ingredients

Sweet Potatoes

  • 4 large organic sweet potatoes, peeled and cubed
  • 23 tablespoons extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Casserole Filling

  • 1/2 cup almond milk (or whole milk / plant-based milk)
  • 2 teaspoons vanilla extract
  • 4 tablespoons unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked and drained
  • 2 cups marshmallows

Topping

  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Preheat and Prepare Sweet Potatoes: Preheat your oven to 400°F and line a baking sheet with parchment paper. This will help prevent sticking and make cleanup easier.
  2. Coat Sweet Potatoes: In a large bowl, toss the cubed sweet potatoes with olive oil, ground cinnamon, and nutmeg until every piece is evenly coated with spices and oil.
  3. Roast Sweet Potatoes: Spread the sweet potatoes in a single layer on the prepared baking sheet. Roast for 50-60 minutes until they are tender, charred, and golden brown. Once done, remove from oven and let cool slightly.
  4. Prepare Baking Dish: Reduce oven temperature to 375°F and lightly grease a large 9×13 inch baking dish to prevent sticking.
  5. Combine Casserole Filling: In a mixing bowl, combine the roasted sweet potatoes with almond milk, vanilla extract, brown sugar, maple syrup, additional cinnamon, nutmeg, allspice, soaked raisins, and marshmallows. Mix until well incorporated, allowing some sweet potatoes to mash while keeping chunks for texture.
  6. Assemble Casserole: Transfer the sweet potato mixture into the greased baking dish spreading evenly. Dot the surface with small pieces of butter and gently press in a few extra marshmallows for added sweetness and gooeyness.
  7. Prepare Topping: In a separate bowl, mix raw pecans with maple syrup, ensuring the pecans are fully coated to create a sweet, sticky topping.
  8. Add Topping and Cover: Generously spread the pecan topping over the casserole to fully cover the surface. Cover the dish tightly with foil to keep moisture in during baking.
  9. Bake with Foil: Bake the covered casserole for 15 minutes at 375°F to heat through and meld flavors.
  10. Uncover and Finish Baking: Remove the foil and continue baking uncovered for another 15 minutes, or until the topping is golden brown and the marshmallows have melted and slightly toasted.
  11. Cool and Serve: Remove the casserole from the oven and let it cool slightly to set before serving. Enjoy it as a delicious side with your favorite main dishes.
  12. Bon Appetit! Your Southern Maple Sweet Potato Casserole is ready to delight your guests and family.

Notes

  • Soaking the raisins before adding them helps plump them up and prevents them from drying out during baking.
  • You can substitute almond milk with whole milk or any plant-based milk of your choice.
  • For an extra rich flavor, use unsalted butter and cube it small so it distributes evenly.
  • Make sure to watch the casserole in the last 15 minutes to achieve a golden brown marshmallow topping without burning.
