Ingredients

Chicken and Coating

  • 300 ml boiling water
  • 1 chicken stock cube (bouillon cube), undiluted and crumbled

Finishing Ingredients

  • 100 g cream cheese
  • 50 g Parmesan cheese (grated)
  • 15 g fresh basil leaves

Instructions

  1. Coat the Chicken: Toss the cut chicken breast pieces in the plain flour along with plenty of sea salt and freshly ground black pepper until they are well coated. This creates a slight crust and helps thicken the sauce later.
  2. Combine Ingredients in Slow Cooker: Place the coated chicken into the slow cooker, then add the crushed garlic, finely chopped sun-dried tomatoes, dried oregano, paprika, crumbled chicken stock cube, and boiling water. Stir gently to incorporate the flavors.
  3. Slow Cook the Chicken: Cover and cook on HIGH for 2.5 to 3 hours or on LOW for 5 to 6 hours, until the chicken is fully cooked through and tender.
  4. Finish the Sauce: Just before serving, mix the cream cheese, grated Parmesan, and fresh basil leaves into the slow cooker. Stir well to create a creamy, flavorful sauce that coats the chicken perfectly. Serve hot.
