Ingredients

Shrimp Marinade

  • 12 ounce bag medium frozen shrimp, deveined, thawed and peeled (including the tail)
  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • 3 garlic cloves, minced
  • Pinch of red pepper flakes
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for marinade)

Vegetables

  • 1 red bell pepper, sliced
  • 1 large zucchini, cubed
  • 1 tablespoon olive oil (for cooking vegetables)
  • 2 tablespoons lime juice

Instructions

  1. Prepare Shrimp Marinade: In a large bowl, combine 2 tablespoons olive oil, cumin, minced garlic, red pepper flakes, salt, pepper, and smoked paprika. Add the thawed and peeled shrimp to the bowl and mix well to coat the shrimp evenly with the marinade.
  2. Cook Vegetables: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the sliced red bell pepper and sauté for about 3 minutes, stirring occasionally until it starts to soften. Add the cubed zucchini and cook for an additional 3-5 minutes until the vegetables are cooked through but still retain a slight firmness. Remove the vegetables from the skillet and set aside.
  3. Sauté Shrimp: In the same skillet, add the marinated shrimp and sauté for 2-3 minutes until they turn pink and are cooked through.
  4. Combine and Heat Through: Return the cooked vegetables to the skillet with the shrimp. Stir everything together and cook for 1-2 minutes just until the vegetables are heated through. Remove from heat and add 2 tablespoons lime juice to brighten the flavors before serving.
  5. Serve: Serve the shrimp and vegetables warm, optionally over cooked rice for a fulfilling meal.
