Ingredients

Instructions

  1. Preheat oven: Preheat the oven to 400 degrees Fahrenheit to prepare for toasting the bread and roasting the tomatoes.
  2. Toast the bread: Brush each slice of French bread with olive oil and season lightly with sea or Himalayan pink salt. Arrange the slices on a large baking sheet and bake for about 10 minutes, until the bread is lightly browned and crisp.
  3. Prepare and roast tomatoes: In a medium bowl, toss the cherry tomatoes with olive oil, oregano, parsley, garlic powder, and salt until evenly coated. Spread the tomatoes on a baking sheet in a single layer and roast in the oven for 20 minutes until they burst and release their juices. Remove from the oven and let cool slightly.
  4. Assemble bruschetta: Spread about 2 tablespoons of ricotta cheese on each slice of toasted bread. Spoon the roasted tomatoes and their juices onto the ricotta layer.
