Ingredients

Crust:

  • 2 1/2 cups graham cracker crumbs
  • 12 tablespoons unsalted butter, melted

Cream Cheese Mixture:

  • 2 (8 oz.) packages cream cheese, softened
  • 1 cup confectioners’ sugar
  • 4 cups whipping cream
  • 2 teaspoons vanilla extract, divided
  • 6 tablespoons granulated sugar

Mixed Fruit Filling:

  • 1 (21 oz.) can strawberry pie filling
  • 1 (21 oz.) can blueberry pie filling

Instructions

  1. Prepare the Crust: In a bowl, combine the graham cracker crumbs and melted butter. Blend with a fork until the crumbs are evenly moistened. Set aside 3 tablespoons of crumbs to be used for sprinkling on top later. Press the remaining crumb mixture evenly into the bottom of a 9×13-inch pan that has been lightly sprayed with non-stick cooking spray.

Prepare the Cream Cheese Mixture: Using an electric mixer, cream together the softened cream cheese, confectioners’ sugar, and 1 teaspoon of vanilla extract until the mixture is smooth and creamy. In a separate mixing bowl, whip the whipping cream, granulated sugar, and remaining 1 teaspoon of vanilla extract until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture by hand until well combined and fluffy.
  3. Assemble the Layers: Spread about one-third (approximately 3 cups) of the cream cheese and whipped cream mixture evenly over the prepared crust. Drop large spoonfuls of the strawberry pie filling on top of this layer and gently spread it out to cover, connecting the dollops for even coverage. Next, spread another one-third of the cream cheese mixture over the strawberry layer, smoothing it evenly. Repeat the process with the blueberry pie filling: drop spoonfuls on top and gently spread to cover. Finish by spreading the remaining cream cheese mixture over the blueberry layer evenly. Sprinkle the reserved 3 tablespoons of graham cracker crumbs on top of the final layer.
