Delightfully simple and refreshing Raspberry Yogurt Bites that combine fresh raspberries, creamy yogurt, and a luscious chocolate topping. These bite-sized frozen treats are perfect for a healthy snack or a cool dessert, requiring minimal preparation and no baking.

Ingredients

Raspberry Yogurt Mixture

  • 1 cup raspberries
  • 1 cup yogurt of choice (plain or vanilla)

Chocolate Topping

  • 3/4 cup chocolate chips (optional, can be omitted for younger toddlers or substituted with peanut butter)

Instructions

  1. Mash the Raspberries: Start by mashing the raspberries in a bowl until they form a pulpy consistency.
  2. Combine with Yogurt: Add the yogurt to the mashed raspberries and stir thoroughly until well combined and smooth.
  3. Prepare the Muffin Tin: Line a mini muffin tin with paper liners or use a silicone muffin pan to ensure easy removal of the bites after freezing.
  4. Fill the Muffin Cups: Scoop the raspberry yogurt mixture into the prepared muffin tin, filling each cup about halfway to allow space for freezing expansion.
  5. Freeze the Mixture: Place the muffin tin in the freezer and let it freeze for at least 4 hours, or until the yogurt bites are completely solidified.
  6. Melt the Chocolate Chips: Once the bites are frozen, melt the chocolate chips in the microwave for about 1 minute, stirring every 20 seconds until the chocolate is smooth and fully melted.
  7. Top the Yogurt Bites: Remove the frozen yogurt bites from the freezer and drizzle or spread the melted chocolate on top of each bite evenly. Return the tin to the freezer for a few minutes until the chocolate hardens.
  8. Serve or Store: Once the chocolate is set, carefully remove the yogurt bites from the muffin tin. Serve immediately or store in the freezer for later consumption. Allow 1-2 minutes before peeling off the liners to prevent sticking.

Notes

  • Use silicone muffin pans for easier removal without liners.
  • Substitute chocolate chips with peanut butter or skip the topping entirely for a toddler-friendly version.
  • Wait a couple of minutes after removing from the freezer before popping out the bites to avoid breaking.
  • Store leftovers in an airtight container in the freezer to maintain freshness.
