Ingredients

Bar Base

  • ½ cup butter, softened
  • ¾ cup granulated sugar

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Prepare an 8×8-inch square baking pan by spraying it with non-stick spray or lining it with parchment paper to ensure easy removal of the bars.
  2. Mix Bar Ingredients: In a large bowl, combine the softened butter, granulated sugar, eggs, lemon juice, salt, and lemon zest. Use a hand mixer for a smooth, well-incorporated batter, or mix by hand if preferred.
  3. Add Flour and Raspberries: Gently fold in the all-purpose flour until just combined to keep the batter tender. Then, carefully stir in the fresh raspberries by hand to avoid crushing them.
