Ingredients

Potatoes

  • 2 lbs. russet potatoes
  • 1/3 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 1 Tbsp cooking oil
  • 1/4 tsp salt

Broccoli

  • 1 lb. broccoli florets (fresh or frozen)
  • 1 Tbsp cooking oil
  • 1/4 tsp salt
  • 1/4 tsp pepper

Chicken

  • 1 lb. boneless, skinless chicken breast
  • 1 Tbsp garlic herb seasoning
  • 1 Tbsp cooking oil
  • 1/4 tsp salt (divided from above)
  • 1/4 tsp pepper (divided from above)

Dressing

  • 8 Tbsp (4 servings x 2 Tbsp) ranch dressing

Instructions

  1. Preheat Oven and Prepare Potatoes: Preheat your oven to 400ºF (204ºC). Clean and dice the russet potatoes into ¾” pieces to ensure even roasting and crispiness.
  2. Season Potatoes: In a small bowl, mix the grated Parmesan, garlic powder, paprika, and 1/4 tsp salt. Place the diced potatoes in a larger bowl, drizzle with 1 Tbsp cooking oil and the Parmesan seasoning mixture, then toss thoroughly to ensure even coating.
  3. Roast Potatoes: Spread the coated potatoes evenly over a parchment-lined baking sheet. Roast in the preheated oven for about 30 minutes until golden brown and crispy, stirring once halfway through the cooking time for even roasting.
  4. Prepare Broccoli: While potatoes roast, place broccoli florets in a bowl. Drizzle with 1 Tbsp cooking oil, add 1/4 tsp salt and 1/4 tsp pepper, then toss to coat evenly.
  5. Roast Broccoli: Spread the broccoli on a separate parchment-lined baking sheet and roast in the same oven for about 20 minutes, until edges are browned, stirring once halfway through.
  6. Prepare Chicken: While vegetables roast, fillet each chicken breast into two thinner pieces for faster, even cooking. Season both sides with garlic herb seasoning.
  7. Cook Chicken: Heat a large skillet over medium heat. Add 1 Tbsp cooking oil and swirl to coat the pan. Add the chicken breasts and cook for 5-6 minutes per side until browned and cooked through.
  8. Rest and Slice Chicken: Transfer chicken to a cutting board and let rest for 5 minutes to retain juices. Slice the chicken into strips for easier serving and meal prep.
  9. Assemble Meal Prep Containers: Divide the roasted potatoes, roasted broccoli, and sliced chicken evenly between four meal prep containers.
  10. Add Dressing: Portion 2 Tbsp ranch dressing into four small dipping containers to accompany each serving.
  11. Store and Serve: Refrigerate prepared meal preps until ready to eat. Reheat as desired before serving and drizzle with ranch dressing.
