Ingredients

Soup Base

  • 2 tablespoons olive oil
  • 1 medium white onion, diced
  • 1 large carrot, diced
  • 1 small red bell pepper, diced
  • 5 cloves garlic, minced

Spices

  • 1 tablespoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon chipotle powder

Liquids and Beans

  • 2 cups vegetable broth
  • 4 (15-ounce) cans black beans, rinsed and drained
  • 1 (15-ounce) can fire-roasted diced tomatoes
  • 1 lime (for juice)

Toppings (optional)

  • Chopped cilantro
  • Crumbled cotija cheese or shredded cheddar cheese
  • Diced avocado
  • Diced red onion

Instructions

  1. Sauté Vegetables: Heat the olive oil in a large stockpot over medium-high heat. Add the diced onion, carrot, and red bell pepper and sauté for about 6 minutes, stirring occasionally until the vegetables are softened.
  2. Add Aromatics and Spices: Stir in the minced garlic, ground cumin, chili powder, and chipotle powder. Continue sautéing for an additional 2 minutes, stirring frequently to release the flavors without burning the spices.
  3. Add Broth and Beans: Pour in the vegetable broth and add the rinsed and drained black beans. Stir everything together to combine and bring the mixture to a simmer.
  4. Blend a Portion: In a blender, combine the fire-roasted diced tomatoes with about 1 heaping cup of the hot black bean soup. Purée until smooth, working carefully. Return this blended mixture to the pot along with approximately 1 tablespoon of fresh lime juice. Stir to combine. For a creamier texture, optionally blend an additional 1-2 cups of soup and add it back.
  5. Simmer & Adjust Seasoning: Allow the soup to simmer gently for 5 minutes to meld flavors. Taste and adjust seasoning with more lime juice, salt, and pepper as preferred.
  6. Serve: Ladle the soup into bowls and garnish with your choice of chopped cilantro, crumbled cotija or shredded cheddar cheese, diced avocado, and diced red onion. Serve warm and enjoy!
