Enhanced with dried cranberries, dark chocolate chips, and a touch of honey, they provide a perfect balance of sweetness and texture, baked to a golden finish.

Ingredients

Dry Ingredients

  • 1 1/2 cups oats
  • 2 tsp chia seeds
  • 1 1/2 cup chopped walnuts
  • 1 cup dried cranberries
  • 2 tsp pumpkin spice
  • 1 cup rice krispies
  • 1 cup dark chocolate chips
  • 1 tsp baking powder
  • 3/4 cup gluten-free flour (1.1 GF flour)

Wet Ingredients

  • 3/4 cup light brown sugar, packed
  • 4 tbsp honey
  • 1/2 cup unsalted butter
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready once your granola bar batter is prepared.
  2. Mix Sugars and Butter: In a mixing bowl, combine the light brown sugar, honey, and unsalted butter. Beat or mix for about 3 minutes until smooth and creamy to incorporate air and create a better texture.
  3. Add Egg and Flavorings: Crack in the egg and add vanilla extract, then stir in the gluten-free flour and baking powder until just combined to form the batter base.
  4. Incorporate Dry Ingredients: Gently fold in the oats, chia seeds, chopped walnuts, dried cranberries, pumpkin spice, rice krispies, and dark chocolate chips, ensuring even distribution without overmixing.
  5. Spread and Bake: Spread the batter evenly into a greased or lined 9×13-inch baking dish. Bake in the preheated oven for 20 to 25 minutes, or until the top is golden brown and the edges start to firm up.
  6. Cool and Serve: Remove the dish from the oven and let the granola bars cool completely in the pan. Once cooled, cut into 8 bars and enjoy this chewy, spiced snack.

Notes

  • Ensure the bars are completely cooled before cutting to maintain their chewy texture and prevent crumbling.
  • You can substitute walnuts with pecans or almonds based on preference or allergies.
  • For a sweeter bar, increase the honey by 1 tbsp or add more chocolate chips.
  • Store granola bars in an airtight container at room temperature for up to a week or freeze for longer storage.
