Ingredients

Wet Ingredients

  • ½ cup unsalted butter (melted and cooled for at least 10 minutes)
  • ½ cup sugar
  • ⅓ cup light brown sugar (tightly packed)
  • ¼ cup pumpkin puree
  • 1 large egg yolk
  • ¾ teaspoon vanilla extract

Instructions

  1. Combine Wet Ingredients: In a medium bowl, stir together the melted and cooled butter with sugar and brown sugar until well combined. Add the pumpkin puree and stir thoroughly to incorporate.
  2. Add Egg and Vanilla: Mix in the egg yolk and vanilla extract to the wet mixture until smooth and fully blended.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the flour, pumpkin pie spice, baking soda, cream of tartar, and salt until evenly mixed.
  4. Combine Wet and Dry: Gradually add the dry ingredients into the wet mixture, stirring until the dough comes together with no streaks of flour visible.
  5. Chill Dough: Cover the dough with plastic wrap and refrigerate for at least 45 minutes to firm up and develop flavors.
