These Pumpkin-Shaped Baked Brie Bites are a delightful autumn appetizer featuring creamy brie cheese wrapped in flaky puff pastry with a sweet dollop of pumpkin, apple, or regular jam. Perfectly golden and adorned with a cinnamon stick stem, they capture the cozy flavors of fall and impress guests with a festive presentation.

Ingredients

Pastry and Cheese

  • 1 package refrigerated puff pastry (such as Jus-Rol brand)
  • 10 individual 0.9 oz brie bites or 10 oz brie, cut into small circles

Fillings and Toppings

  • 1/4 cup jam, pumpkin butter, or apple butter
  • 1 large egg or egg yolk, beaten
  • Cinnamon sticks or pretzel sticks (optional, for stems)

Instructions

  1. Prepare Oven and Baking Sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Cut Puff Pastry: Unwrap the refrigerated puff pastry and cut it into approximately 3×3 inch squares, aiming for about 12 squares. You’ll have a few extra for backup.
  3. Add Jam and Brie: Place a 1/2 teaspoon dollop of your chosen jam, pumpkin butter, or apple butter in the center of each puff pastry square. Then, top each with a small round of brie cheese.
  4. Fold and Seal Puffs: Fold the corners of the puff pastry over the brie to create a closed pocket, pinching the edges gently to seal them and prevent leaking during baking.
  5. Wrap with Twine: Cut 10 lengths of kitchen twine (~18 inches each). Wrap each pastry pocket about four times with twine, knotting securely on the seam side and trimming any loose ends. This creates the signature pumpkin shape.
  6. Egg Wash: Using a pastry brush, lightly brush the tops of each wrapped pastry with the beaten egg or egg yolk. This promotes a beautiful golden brown color upon baking.
  7. Bake: Place the brie bites seam-side down on the prepared baking sheet and bake for 30 minutes until the pastry is puffed and golden. Some brie or jam may leak, which adds to the rustic appeal.
  8. Add Stems and Serve: Once baked, gently place a small piece of cinnamon stick or a pretzel stick on top of each puff pastry bite as a decorative pumpkin stem. Serve warm and enjoy the melty, sweet, and savory flavors.

Notes

  • Using kitchen twine is essential for achieving the pumpkin shape but be sure to remove the twine before eating.
  • Substitute jams based on flavor preferences to customize sweetness and spice.
  • If large brie wheels are used instead of individual bites, cut into smaller rounds matching the puff pastry squares for best results.
  • These bites are best served warm but can be reheated gently in the oven to retain crispness.
  • Be cautious while handling hot cheese as it will be molten inside.
