Celebrate the flavors of fall with these delicious and wholesome Pumpkin Puffs. Made with pumpkin puree, banana, and oats, these bite-sized snacks are lightly spiced and perfect for babies or anyone looking for a soft, healthy treat. Baked until just golden and soft, they are easy to make and store, making them an ideal option for a quick autumn snack.

Ingredients

Dry Ingredients

  • ½ cup old fashioned rolled oats
  • ½ tsp baking powder
  • ¼ tsp pumpkin spice

Wet Ingredients

  • ¼ cup pumpkin puree
  • ¼ cup banana puree (about ½ large overripe banana)
  • 1 egg yolk
  • ½ tbsp mild tasting oil

Instructions

  1. Preheat Oven: Set your oven to 350 degrees F (180 degrees C) to prepare for baking the puffs.
  2. Blend Ingredients: Combine all the ingredients in a blender and blend until the mixture is smooth and resembles pancake batter. Make sure there are no chunks throughout.
  3. Prepare Batter for Piping: Transfer the batter into a piping bag or a Ziploc bag with a small corner cut off to pipe out even, small circles.
  4. Pipe and Bake: Line a baking pan with parchment paper. Pipe out small dime-sized circles onto the pan. Bake in the preheated oven for 10 minutes.
  5. Finish Baking with Residual Heat: After 10 minutes, turn off the oven but leave the puffs inside for another 8-10 minutes until the edges start to brown slightly. This ensures they dry out gently without overbaking.
  6. Cool and Store: Remove the puffs from the oven, let them cool completely, then store in an airtight container at room temperature for freshness.

Notes

  • These Pumpkin Puffs don’t melt in your mouth like store-bought freeze-dried ones but are soft enough for babies to break down easily. Use your discretion offering them to young children and test their texture yourself first.
  • The batter should have a smooth, pancake batter-like consistency to pipe easily and form good puffs.
  • Oven temperatures vary, so check the puffs a few minutes early to avoid overbaking. They are done when dry to the touch with no sticky residue.
  • For blenders that struggle with the small batter quantity, pre-blend the oats into a flour to ensure a smooth mixture.
