These Pumpkin Pie Pop Tarts are a delightful autumn treat combining flaky pre-made pie crusts filled with a spiced pumpkin puree mixture. Baked to golden perfection and topped with a sweet maple glaze, these pop tarts offer a cozy and delicious twist on traditional pumpkin pie dessert.

Ingredients

Filling

  • 1/2 cup pumpkin puree
  • 3 tablespoons packed brown sugar
  • 1/2 teaspoon vanilla paste or extract
  • 1/4 teaspoon pumpkin spice mix
  • 1 teaspoon pure maple syrup

Crust

  • 2 round pre-made pie crusts

Glaze

  • 1/2 cup confectionery sugar
  • 2 teaspoons pure maple syrup
  • 1 tablespoon milk

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a cookie sheet with parchment paper to prevent sticking and ease cleanup.
  2. Prepare Crust Rectangles: Cut 4 rectangles from each pie crust, making sure to save any extra dough from the edges for future use.
  3. Place Bottom Crusts: Arrange 4 of the crust rectangles on the prepared parchment-lined cookie sheet; these will serve as the pop tart bases.
  4. Mix Filling: In a medium bowl, combine the pumpkin puree, packed brown sugar, vanilla, pumpkin spice mix, and 1 teaspoon of pure maple syrup until smooth and well mixed.
  5. Fill the Crusts: Spoon approximately 2 1/2 tablespoons of the pumpkin mixture onto each crust rectangle, leaving about a 1/2-inch border around the edges to allow for sealing.
  6. Seal Pop Tarts: Place another crust rectangle on top of each filled one, then crimp the edges securely using a fork to seal the filling inside and prevent leaks during baking.
  7. Bake: Bake in the preheated oven for 15-20 minutes, or until the edges of the pop tarts begin to turn golden brown. The exact baking time may vary depending on the pie crust brand used.
  8. Prepare Glaze: While the pop tarts bake and cool, whisk together confectionery sugar, 2 teaspoons of pure maple syrup, and 1 tablespoon of milk in a small bowl to form a smooth glaze.
  9. Glaze the Pop Tarts: Once the pop tarts have cooled completely, drizzle or spoon the maple glaze over the tops to add sweetness and a finishing touch.

Notes

  • The pumpkin spice mix can be adjusted to your taste or substituted with cinnamon, nutmeg, and cloves.
  • Allow the pop tarts to cool fully before glazing to prevent the glaze from melting and running off.
  • These pop tarts are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
  • For a vegan version, use a plant-based milk and a vegan pie crust.
  • Make sure to crimp the edges well to avoid filling leakage during baking.
