Cream Cheese Frosting

  • 8 ounces (1 brick) block-style cream cheese (softened but still cool)
  • 1/4 cup unsalted butter (softened but still cool)
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups confectioners’ sugar (sifted)

Instructions

  1. Preheat Oven: Preheat your oven to 350° F. Line a baking sheet with parchment paper and set it aside for later use.
  2. Whisk Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and pumpkin pie spice until evenly combined. Set this mixture aside.
  3. Make Cookie Dough: Using a stand mixer or hand mixer, beat the room temperature unsalted butter, granulated sugar, and brown sugar on medium-high speed until the mixture is light and fluffy, approximately 3 minutes. Then add the canned pumpkin puree, egg, and vanilla extract, mixing until well combined. Scrape the sides and bottom of the bowl as needed. Gradually add the dry ingredient mixture and mix just until combined; the dough will be slightly sticky and soft.
