Ingredients

Dry Ingredients

  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cloves

Wet Ingredients

  • 4 large eggs (room temperature)
  • ½ cup water
  • 2 cups granulated sugar
  • 15 ounces pumpkin puree (1 can)
  • ⅔ cup vegetable oil (or other neutral oil)
  • 1 teaspoon vanilla extract

Streusel Topping

  • ¼ cup unsalted butter (melted)
  • ½ cup light brown sugar
  • ½ cup all purpose flour
  • 2 teaspoons ground cinnamon
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease two 8.5 x 4.5 inch loaf pans and dust them with flour to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, gently whisk together the all-purpose flour, baking powder, baking soda, salt, and the spices—cinnamon, nutmeg, ginger, and cloves. Set aside.
  3. Mix Wet Ingredients: In another large bowl or the bowl of an electric mixer, beat together the eggs, water, granulated sugar, pumpkin puree, vegetable oil, and vanilla extract until fully incorporated and smooth.
  4. Combine Wet and Dry: With the mixer running on low speed, gradually add the dry ingredients to the wet ingredients. Mix just until combined; avoid overmixing to keep the bread tender.
  5. Fill Loaf Pans: Evenly divide the batter between the two prepared loaf pans, filling each about two-thirds full to allow room for rising.
  6. Prepare Streusel: In a small bowl, mix the melted butter, light brown sugar, flour, cinnamon, and chopped nuts if using. Stir gently until the mixture is combined but still lumpy.
  7. Add Streusel Topping: Sprinkle the cinnamon streusel evenly over the tops of each loaf batter before baking.
