  • 1–2 teaspoons Pumpkin Spice
  • 2 tablespoons Maple Syrup

Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350 °F (180 °C). Line a mini-muffin pan with mini paper liners or a baking sheet with parchment paper and grease them lightly with cooking oil spray. Set aside.
  2. Mix Ingredients: In a mixing bowl, combine almond flour, pumpkin puree, maple syrup, and 1 teaspoon pumpkin spice if using. Stir well until a sticky, firm dough forms.
  3. Form the Bites: Roll the dough into small balls and place them on the prepared baking sheet or inside the lined mini-muffin pan.
  4. Bake: Bake for 12-14 minutes at 350 °F (180 °C) until the edges turn golden and dry.
  5. Cool Slightly: Let the bites cool on the tray for 5 minutes, then carefully transfer them to a cooling rack using a teaspoon or small utensil to avoid breaking as they are still soft.
  6. Cool Completely: Allow the bites to cool for 30 minutes so they firm up and set fully.
  7. Prepare Coating: In a small bowl, mix the unrefined cane sugar with pumpkin spice for the coating.
  8. Coat the Bites: Lightly brush each pumpkin bite on all sides with maple syrup, then roll it in the pumpkin spice sugar mixture. Repeat until all bites are evenly coated.
